Tortilla breakfast accordion: fold tortillas accordion-style around a baking dish, stuff the folds with ham, sausage and cheese, pour over a herby egg-milk custard and bake at 180°C until golden. Crispy, melty and savoury.

    Fold each tortilla like an accordion and place them vertically around the edge of a round baking dish, creating a circular pattern.

    Stuff the accordion folds with ham, smoked sausage, and cheese.

    In a bowl, whisk 4 eggs with Italian herb mix, salt, and milk.

    Pour the egg mixture over the stuffed tortillas, making sure it seeps into all the folds.

    Bake at 180°C (350°F) for 18 minutes (or air fryer at 180°C (350°F) for 12 minutes) until golden brown on top.
