Potato and meat parchment dinner: spread spiced mashed potato on buttered, seasoned parchment, layer soy-glazed beef, browned mushrooms and mozzarella, fold the parcel and air-fry at 180°C until crisp and melty.

    Cut a rectangle of parchment paper and fold it in half. This square holds the whole dinner together.

    Spread a thin layer of butter across the parchment. Sprinkle paprika, dried dill, garlic powder, and salt right onto the butter. When the filling goes on later, these spices toast against it and form a crust.

    Heat a skillet with a splash of olive oil. Add the ground beef and break it up with a potato masher — it works faster than a spatula and the pieces come out small and even. Spread it thin so it browns, not steams.

    While the meat cooks, mix the sauce in a bowl: brown sugar, corn starch, garlic powder, soy sauce, and water. Whisk until smooth.

    Pour the sauce into the meat. Stir through and keep cooking until it thickens and coats the meat. Transfer the meat to a bowl.

    In the same hot skillet, add sliced mushrooms — no oil, no butter, just a dry pan. Let them release their moisture first. Once the water is gone, drizzle in some oil, add pepper and salt. Now they’ll brown properly with golden edges.

    Spread mashed potato over the spiced parchment, covering the whole sheet. The potato locks those spices in and becomes the crust.

    Pile the cooked meat over the potato layer. Add mushrooms on top. Finish with shredded mozzarella, enough to cover everything.
