Creamy peanut butter noodles in 10 minutes: pour smoking-hot oil over garlic, ginger, shallot and chili to bloom them, whisk in peanut butter, soy and rice vinegar, then toss with instant noodles. One spicy-savoury bowl, zero leftovers.

    Cook the instant noodles per package instructions — pour boiling water over them and let sit. They’ll be ready by the time the sauce is done.

    Pour 50 ml of vegetable oil into a pot and heat it until almost smoking.

    In a separate cold skillet, add peanut butter, minced garlic, chili paste, diced shallot, toasted sesame seeds, minced ginger, and sliced scallions.

    When the oil reaches smoking point, pour it straight over everything in the skillet at once. This hot oil bloom instantly opens up every aromatic.

    Whisk everything together. The heat cooks, the whisk combines.

    Add soy sauce and rice vinegar, whisking until smooth. The soy deepens the flavour, the vinegar cuts through the richness.

What is the hot oil bloom and why do it?

Heating the oil until almost smoking and pouring it straight over the raw garlic, ginger, shallot and chili instantly releases their aromatics and lightly cooks them — a deeper, toastier flavour than stirring them into a cold sauce.

Can I use natural peanut butter?

Yes. Natural peanut butter (just peanuts) gives the cleanest flavour — stir it well first. Sweetened types work too. If the sauce turns too thick, loosen it with a splash of the hot noodle water until it coats the strands.

What noodles work, and what if I have no chili paste?

Any instant or wheat noodle works — ramen, udon or egg noodles. No chili paste? Swap in chili crisp, sriracha or a pinch of red pepper flakes, or leave it out for a mild, nutty bowl.
