Ripe strawberries are roughly ninety per cent water, and every gram of it can freeze into something the tongue detects, so the strawberry recipes here deal with the water before the cream arrives. The berries for the chocolate-shelled bars get a brief salted soak and then a thorough pat dry, because dry fruit avoids ice crystals; the sorbet and the no-churn ice cream both start from berries frozen solid, spaced well apart so they stay loose, and blend into a thick, sorbet-like purée, never watery. Blueberries pose the opposite problem inside a batter, and the lemon muffins solve it by putting the fruit in first: spoon the berries into the paper cups, pour the batter over, and the crumb bakes up golden instead of streaked purple. Bake at 180°C (350°F) until the tops are golden and spring back, and cool fully before the lemon glaze goes on.
