A set bar signals when it is ready to leave its mould: the no-churn strawberry base freezes until the mould releases cleanly, and that clean release is the doneness cue, not the clock. The ziplock-bag bars take another route — chocolate pressed into a thin shell inside small bags, piped full, frozen flat on a tray until completely solid, after which the bags peel away and the bars snap open. A little deliberate warming has its place too: the Raffaello pops rest out of the freezer just until the surface barely softens, which is exactly what lets the extra coconut flakes stick. The rice paper mochi is wrapped, flipped seam-side down and frozen until the cream cheese filling sets firm enough to slice — and because the wrapper is translucent, any lumps left in that filling will show, so beat it completely smooth first.
