Notes from our kitchen
We filmed this alongside the lemon blueberry muffins as our hot-day drink, and the whole thing came together in under 5 minutes. The step we watch closest is the shake: seal the bottle and keep going for a full 30–60 seconds, until the coffee turns pale and thick enough to sit on top of the drink instead of sinking into it.
The honest gotcha is the hot water. Two tablespoons is enough to melt the chocolate shell and a little ice cream into a sweet base. Pour in more and the whole bar collapses, the drink turns lukewarm, and even a cup of ice will not bring it back. Melt just the base, then get the ice in straight away.
Variations
- Plain vanilla bar. A vanilla ice cream bar without the chocolate shell works well too. The base comes out milder, so you may want a little extra sugar in the foam.
- Milk instead of water. Swap the 2 tbsp of hot water for hot milk to melt the bar. It makes the base creamier, closer to a latte, without changing anything else in the method.
- Less sweet version. Skip the sugar in the bottle. The melted chocolate shell and ice cream already sweeten the base, so the foam can stay plain and slightly bitter for balance.
- Shake the foam ahead. The foam can be shaken a little ahead and kept in the sealed bottle in the fridge. Give it a quick 10-second shake to revive it before pouring over the melted base.
